Cooking Time: 35 minutes Servings: 4 Ingredients: 8 eggs Half chopped onion 2 tbsp. of butter 1/4th cup of milk Half cup of shredded cheddar cheese Half cup of chopped green bell pepper 1 cup of cooked ham, chopped Directions:

1. Preheat the oven to 400 degrees and grease a 9 x 13-inch baking pan. 2. Melt butter in a pan and stir fry onion and bell pepper in it until softened. Now add ham and fry for 5 more minutes. 3. Beat eggs with milk and cheese in a large bowl and add ham mixture in it. Beat well and pour in the greased dish. 4. Bake it in the oven for 25 minutes and serve warm.

Recipe 2 : Baked Omelet Squares

This omelet can be served for breakfast as well as brunch. This is very delicious when served with sausage balls especially on Christmas mornings. Cooking Time: 30 minutes Servings: 8 Ingredients: 1/4th cup of butter 1 small onion chopped Chopped, cooked ham Sliced jalapeno peppers 12 scrambled eggs Half cup of milk

Salt and pepper to taste 1 can sliced mushrooms 1 can half sliced pitted black olives 1 ½ cup of shredded cheddar cheese Directions: 1. Preheat the oven to 400 degrees and grease a 9 x 13 baking dish. 2. Now, melt butter in a skillet and fry onions in it until softened. 3. Spread cheese on the bottom of the greased dish and then spread the layers of olives, peppers, ham, cook onions and mushrooms. Now, beat eggs together with milk in a bowl and season with salt and pepper. 4. Pour egg over ingredients in the baking dish 5. Now bake in oven for 30 minutes uncovered.

Recipe 3 : Paleo Omelet Muffins

This is a hearty recipe of omelet in which eggs are cooked in a cup giving the shape of muffins. Cooking Time: 20 minutes Servings: 8 Ingredients: 8 eggs 1/4th tsp of salt 1/8th tsp of black pepper 2 tbsp. of water 1 cup of diced red bell pepper 1 cup of diced onion 8 ounces of cooked and crumbled ham

Directions: 1. Preheat the oven to 350 degrees and grease the muffin cups. 2. Beat eggs in a bowl and add ham, bell pepper, onions, black pepper and salt. Add little water in the end and beat well. 3. Pour this mixture in the muffin trays to 3/4th size and bake in the oven for 15 minutes.

Recipe 4 : Omelet in a Bag

This recipe is especially good for picky eaters and can be served to guests as well. Cooking Time: 13 minutes Servings: 1 Ingredients: 2 eggs 2 slices of ham chopped 2 tbsp. of onion chopped 1 tbsp. of green bell pepper chopped 1 tbsp. of fresh tomato chopped 1 tbsp. of salsa

2 tbsp. of sliced mushrooms Directions: 1. Crack the eggs in a large resealable bag and squeeze it to beat the eggs. 2. Now add onions, ham, bell pepper, mushrooms, salt and pepper, salsa, tomato and cheese into the bag and seal it again. Mix the eggs well by shaking the bag. 3. Now, boil a large pot of water and place the bag in it. Cook for 13 minutes exactly and then, roll the omelet out of the bag carefully. Serve.

Recipe 5 : Baked Brunch Omelet

This omelet is very easy to prepare and the best thing about this recipe is that you can prepare it the night before and just put it in oven the next morning. Cooking Time: 60 minutes Servings: 12 Ingredients: Half loaf of white bread cut into cubes 2 cups of milk A pinch of salt A dash of hot sauce 1/4th cup of chopped green onion 8 eggs

1 cup of cooked ham cubed 1 ½ pound of cheddar cheese shredded Directions: 1. Preheat the oven to 350 degrees and grease a baking pan. 2. Place half of the bread on the bottom of pan. Sprinkle half of the cheese and then, adding the ham. Repeat this procedure again. 3. Beat eggs in a large bowl and add milk, hot sauce, salt and green onions. Pour this mixture into the pan. 4. Place the pan in a baking sheet with water filled in it and bake for 60 minutes.

Recipe 6 : Chef John ’ s French Omelet

This is the recipe of a true French omelet and basically it involves more of a technique than ingredients. Cooking Time: 5 minutes Servings: 1 Ingredients: 3 fresh eggs Half tsp of cold water 1/4th tsp of salt 2 tbsp. of unsalted butter A pinch of cayenne pepper Directions:

1. Whisk eggs with salt and water for 1 to 2 minutes. Heat 1 ½ tbsp. of butter in a large skillet and pour eggs in it when it bubbles. 2. Stir the eggs with a spatula in a circular pattern while scrambling and leveling the eggs and scraping the sides. Now slow down the heat and level the eggs by using the spatula. 3. Now use the spatula to roll out the eggs starting from the handle side of the pan. 4. Melt the remaining butter and put it under the rolled omelet. Carefully move it to the plate with the seam side downwards.

Recipe 7 : Parmalet

This is a crispy omelet with the inside out technique using Parmesan cheese and then, the perfect taste and texture is obtained. Cooking Time: 5 minutes Servings: 1 Ingredients: 2 eggs 1 tsp of olive oil 1/4th tsp of water 1 pinch of cayenne pepper Salt and black pepper to taste 1 ounce of grated Parmigiano-Reggiano cheese Directions:

1. Add the eggs in a bowl and beat with water until evenly beaten. 2. Drizzle olive oil in a skillet and brush it evenly. Now evenly grate cheese onto the pan up to the thickness of half an inch. 3. Now heat the pan over medium flame until cheese melts and turns brown. At this stage, pour eggs evenly and sprinkle salt, pepper and cayenne. 4. Cover and cook on low flame for 1 minute. Serve when lightly browned.

Recipe 8 : Simple Italian Omelet

The main reason for calling it “an Italian omelet” is using olive oil instead of butter and its quick cooking of the egg to brown it from all sides. Cooking Time: 5 minutes Servings: 1 Ingredients: 3 eggs beaten 2 tbsp. of olive oil 2 tsp of chopped chives 1 tbsp. of crumbled goat cheese Salt and black pepper to taste Directions:

1. Heat olive oil in a skillet and spread it evenly. Now pour eggs in the skillet and spread evenly. Cook the omelet for 1 to 2 minutes so that, it becomes firm. 2. Now sprinkle goat cheese, salt, pepper and cayenne over the omelet. 3. Fold 1.3rd of the omelet to its center and then fold the other 1/3rd portion over the previous one. Carefully slide it in the plate.

Recipe 9 : Baked Omelet

This is an excellent serving for brunch especially during Christmas. Cooking Time: 40 minutes Servings: 5 Ingredients: 8 eggs 1 cup milk Half tsp of salt 1 tbsp. minced onion 3 ounces of diced cooked ham Half cup each of shredded mozzarella and cheddar cheese Directions: 1. Preheat the oven to 350 degrees and grease a casserole dish.

2. Beat the eggs together with milk and add salt, ham, onion, cheddar cheese and mozzarella cheese into it. 3. Bake in oven uncovered for 40 to 45 minutes.

Recipe 10 : Spanish Potato Omelet

This is a fancy and rustic style omelet of Spanish origin. The main flavor is added by crispy fried potatoes and onions and a little chopped tomato. Cooking Time: 45 minutes Servings: 6 Ingredients: Half cup of olive oil 4 eggs Salt and pepper to taste 2 green onions chopped 2 tomatoes, peeled and seeded and chopped 1 large onion thinly sliced Half pound of potatoes peeled and thinly sliced

Directions: 1. Heat olive oil in a large frying pan and sprinkle potatoes with salt and pepper in it. Fry the potatoes until they are crisp and golden. 2. Now stir in onions and cook them until they are softened and brown in color. 3. Meanwhile beat the eggs with salt and pepper and pour gently into the frying pan. Reduce the heat and cook on low flame. 4. Now carefully turn the omelet and cook until eggs are done. Then dish out in plate and garnish with tomatoes and green onions.

Chapter 2 : Egg Dessert Recipes

Recipe 11 : Creamy Blueberry Pie

This pie is not only easy to make but it is the moderate taste and can be served either hot or cold. Cooking Time: 55 minutes Servings: 8 Ingredients: 2 beaten eggs 3 cups of blueberries Half cup of sour cream 1 ½ cup sugar 1 cup of flour 1/4th cup of butter A pinch of salt Directions:

1. Preheat the oven to 375 degrees and place blueberries in a pastry case and keep aside. 2. Combine salt half of the sugar, 1/4th of the flour and salt in a bowl. Also add sour cream and eggs and stir until it is blended completely. Now pour this custard mixture on top of the blueberries. 3. Combine remaining flour and sugar in another bowl. Mix them in a pastry blender while adding butter until a coarse mixture is obtained. 4. Sprinkle this topping over pastry mixture and bake in the oven for a maximum of 55 minutes.

Recipe 12 : Chef John ’ s Chocolate Soufflé

These soufflé servings are always made individually but you can also scale up the recipe for a large serving. Cooking Time: 24 minutes Servings: 2 Ingredients: 1 large egg yolk 2 large egg whites 1 pinch of salt 1 pinch cream of tartar 1 pinch cayenne pepper 3 tbsp. white sugar

1 tbsp. butter 1 tbsp. all-purpose flour 4 1/3 tbsp. of cold milk 2 ounces of dark chocolate Directions: 1. Preheat the oven to 375 degrees and brush the bottom and sides of 2 ramekins with butter. Then, add 1 tbsp. of sugar to the ramekins and rotate until all inside is coated with it. 2. Melt chocolate in a double boiler and keep aside. Now take a large skillet and heat 1 tbsp. of butter in it. Add flour and whisk until it is thickened. Now whisk in milk for 2 to 3 minutes until it becomes steady. Remove from heat and fold with the melted chocolate. Also combine egg yolk, salt and cayenne and mix well. Meanwhile beat the egg white and add cream of tartar. 3. Whisk the egg whites for 2 to 3 minutes and add sugar in it. Whisk for 1 more minute and fold it in chocolate with spatula. 4. Now divide this mixture in two ramekins and bake in the oven for 12 to 15 minutes.

Recipe 13 : Cheesy Amish Breakfast Casserole

This dish is perfect especially for feeding crowds and contains a lot of rich tasting cheeses and eggs. Cooking Time: 55 minutes Servings: 12 Ingredients: 9 beaten eggs 1 sweet onion chopped 1 pound of bacon diced 2 cups of shredded cheddar cheese 1 ¼ cups of Swiss cheese shredded 1 ½ cups of cottage cheese 4 cups of hash brown potatoes shredded Directions:

1. Preheat the oven to 350 degrees and grease a baking dish. 2. In a large skillet, cook bacon and onions until evenly browned. Now transfer the drains bacon and onions to a large bowl and add potatoes, eggs, Swiss cheese, Cheddar cheese and cottage cheese. 3. Pour this mixture in a baking dish and bake for 45 to 50 minutes until all the cheese has melted and eggs are cooked.

Recipe 14 : Grand Mariner Soufflé

This dessert is specially made on special occasions and is a show stopping dessert. Cooking Time: 20 minutes Servings: 2 Ingredients: 2 egg whites 2 egg yolks 1 tbsp. melted butter 1 tbsp. sugar 5 tbsp. melted butter 5 tsp all-purpose flour 1/4th cup of cold milk 1 tsp of orange zest

1 tbsp. Orange based brandy liquor Directions: 1. Preheat the oven to 400 degrees and grease the ramekins with melted butter. Also, dust sugar so that, it gets coated inside. 2. Now melt the remaining butter in a saucepan and stir in flour for 2 minutes. Pour milk in it and stir until evenly cooked. 3. Stir in orange zest and liquor and blend until smooth. Now add egg yolks and vanilla mixture until it is well combined. 4. Now whisk the egg whites in a bowl and add sugar until the meringue becomes thick. 5. Fold this meringue to the yolks mixture and transfer to the ramekins. Bake in the oven for 16 minutes.

Recipe 15 : New York Style Cheesecake

The great thing about this cheesecake is that it is mixed with a little citrus which prevents its cracking when in the oven. Cooking Time: 60 minutes Servings: 12 Ingredients: 4 eggs 1 cup of sour cream 1 tbsp. vanilla extract 3 tbsp. of butter 1 ½ cups of sugar 18 crushed Graham Crackers 2/3 cups of milk 1/4th cup of flour

1 tsp lemon zest 1 tsp orange zest 1 pack cream cheese Directions: 1. Preheat the oven to 350 degrees and lightly grease a spring form pan. 2. Mix the crushed crackers with butter until they become moist. Now spread this mixture evenly at the base of the pan. 3. Mix sour cream with vanilla extract in a bowl and set aside. 4. Whisk together milk, cream cheese and sugar in a separate bowl. Also, add eggs one by one in it. 5. Now stir in the lemon and orange zest in the sour cream mixture and pour in the spring form pan. 6. Bake the cheesecake in the oven for 1 hour.

Recipe 16 : Pecan Sour Cream Coffee Cake

The best part about this cake is the tasty and crumbly structure in coffee layer. Cooking Time: 30 minutes Servings: 8 Ingredients:

For cake: 17/8 cups of all-purpose flour 1 tsp baking powder Half tsp sea salt 3/4th tsp baking soda Half cup of butter 2 eggs (large) 1 ½ tsp vanilla extract

1 cup sugar 1 cup of sour cream

For crumb: 1/3 cup of sugar 1 ½ cups of pecan chopped 1/3 cup light brown sugar 1 tsp cinnamon 1/8 tsp salt 3 tbsp. butter Directions: 1. Reheat the oven to 175 degrees C. and grease a baking dish of 8 x 10 inches. 2. Mix pecans, sugar, salt, cinnamon and brown sugar together in a pot. 3. In another pot, whip flour together, baking powder, baking soda and salt. 4. Now take another bowl and whisk together butter, a cup of sugar and eggs until smoothly blended. Now add flour batter to this mixture. 5. Lay one half of the batter in a baking dish and then, spread one half of crumb above it. Repeat this procedure and then, bake this prepared dish in oven for 30-35 mins.

Recipe 17 : Sweet Potato Soufflé

This is a side dish which made from sweet potatoes but you can also serve it as a dessert. You will like it for sure even if you do not like sweet potatoes. Cooking Time: 35 minutes Servings: 9 Ingredients: 2 eggs 1 cup butter 1 tsp vanilla extract Half cup of milk 3/4th cup white sugar 3 cups mashed 3 potatoes

1 cup flaked coconut 1/3rd cup all-purpose flour 1 cup brown sugar 1 cup chopped walnuts 1/3rd cup melted butter Directions: 1. Preheat the oven to 350 degrees. 2. Now combine mashed potatoes with eggs, softened butter, vanilla extract, sugar and milk. Spoon this mixture in a baking dish. 3. Combine coconuts, flour, chopped nuts and brown sugar together. Sprinkle this mixture over the potato mixture. 4. Bake in the oven for 30 to 35 minutes.

Recipe 18 : Apple and Cheddar Cheese Soufflé

In this tasty smelling and tasting soufflé, the cheddar cheese is combined with caramelized apples which gives it a new taste. Cooking Time: 30 minutes Servings: 4 Ingredients: Apples: 1 tbsp. butter 1 tbsp. sugar 1 apple peeled and diced Batter 2 tbsp. butter Half teaspoon of salt 2 tbsp. all-purpose flour

1 pinch black pepper 1 pinch cayenne pepper 1 pinch grated nutmeg 2 separated eggs 3 ounces sharp shredded cheddar cheese 1 cup milk Directions: 1. Melt butter in a saucepan over a normal heat and then, roast apples in it. When apples begin to soften sprinkle sugar over it and cook for 10 minutes. 2. Preheat the oven to 400 degrees and coat 4 ramekins with butter. 3. Now melt more butter (2 tbsp.) in a saucepan over a normal heat and then, add flour to it. Whisk flour until it is even and its raw taste disappears. Now add milk in it and cook for 4 to 5 minutes until it thickens. 4. Pour this sauce in a bowl and add salt, cayenne, pepper, egg yolks and nutmeg in it. Also stir in cheddar cheese and thoroughly combine it. 5. Now whisk egg whites in a bowl until soft peaks are obtained and then, transfer them to soufflé mixture. Also add in the apples in it and fill the ramekins with mixture. 6. Bake in the preheated oven for about 22 minutes.

Recipe 19 : Chef John ’ s Asparagus Soufflé

Making soufflé is not at all, a difficult task and the interesting thing about soufflés is that you can also enjoy with different flavors, even with different vegetables. Cooking Time: 30 minutes Servings: 4 Ingredients: 1 bunch of asparagus, trimmed and cut into pieces 4 separated eggs 1 pinch cayenne pepper 1 tsp salt Half clove of garlic minced 1 cup cold milk

2 tbsp. all-purpose flour 2 tbsp. of unsalted butter Half cup of sharp cheddar cheese grated Directions: 1. Boil asparagus in water for 2 minutes and then, transfer it to ice water. Then, drain it and set aside. 2. Now melt butter in a saucepan and add flour into it. Whisk it until it becomes even and then add milk. Cook the paste until it thickens and add seasoning of salt, pepper and cayenne. 3. Now place asparagus in a large bowl and add egg yolks and cheese. 4. Now whisk the egg whites until their soft peaks are formed and then, mix half of the egg whites into sauce and remaining half into the asparagus mixture. 5. Now pour the soufflé mixture into the greased ramekins and then, bake them in preheated oven for 25 to 30 minutes.

Recipe 20 : Carrot Soufflé

This recipe of carrot soufflé is as good as any restaurant style soufflé. Cooking Time: 1 hour 5 minutes Servings: 8 Ingredients: 3 beaten eggs 1 ½ tsp of vanilla extract 1 cup white sugar 2 tsp of confectioner’s sugar Half cup of margarine 2 tbsp. of flour 1 ½ tsp of baking powder 1 ¾ pounds of carrots, peeled and chopped Directions:

1. Preheat the oven to 300 degrees and then, boil carrots until they are tender. Then, drain them and pour in a mixing bowl. 2. Beat the carrots with electric mixer and add sugar, vanilla extract and baking powder. Also add eggs, flour and margarine. 3. Bake this mixture in a preheated oven for about 1 hour and then, sprinkle confectioner’s sugar on top.

Recipe 21 : Quick Pickled Eggs and Beets

This is a tasty delight which you can present with foods at special occasions. Cooking Time: 20 minutes Servings: 8 Ingredients: 8 eggs 1 can halved beets sliced with syrup Half cup white vinegar Half cup of sugar Half cup of water Half tsp ground cinnamon Directions:

1. Boil eggs in water for 10 minutes and then, drain them. Peel the eggs after cooling and place in a bowl. 2. Now combine beets, sugar, water, cinnamon and vinegar in a saucepan and bring it to boil. Pour over eggs and cover the saucepan. Chill it for 4 hours or overnight.

Recipe 22 : Bacon Cheddar Deviled Eggs
