Ingredients 1 (29 oz.) cans peach slices, undrained 1 (20 oz.) cans pineapple chunks, undrained 1 (3 1/8 oz.) boxes dry vanilla instant pudding mix 1 lb. strawberry, stemmed and quartered 1 banana, sliced
1/2 pint blueberries 1 bunch grapes 1 -2 tbsp sugar
Directions 1. In a bowl, add the pudding mix fruit cans with juices and mix until pudding dissolves completely. 2. Add the blueberries, strawberries, grapes, banana and sugar and stir to combine. 3. Refrigerate until chilled completely. 4. Enjoy.

Ingredients 1/2 C. white sugar 1/2 C. lemon juice 2 tsp diced onions 1 tsp Dijon mustard 1/2 tsp salt 2/3 C. vegetable oil 1 tbsp poppy seed 1 head romaine lettuce, rinsed, dried and torn into bite
4 oz. shredded Swiss cheese 1 C. cashews 1/4 C. dried cranberries 1 apple, peeled, cored and cubed 1 pear, cubed
Directions 1. In a food processor, add the onion, mustard, sugar, salt and lemon juice and pulse until combined finely. 2. While motor is running, slowly add the oil and pulse until smooth. 3. Add the poppy seeds and pulse for about 2-3 seconds. 4. In a bowl, add the romaine lettuce, pear, apple, cashews, cranberries and cheese and mix. 5. Place the dressing and toss to coat well. 6. Enjoy.

Directions 1. In a bowl, add the apples, bananas and lemon juice and toss to coat well. 2. Add the grapes, strawberries, pineapple and pecans and gently, toss to coat. 3. In another bowl, add the pudding mix, pineapple juice and water and with a wire whisk, beat until smooth. 4. Add the pudding mixture into the bowl of the fruit and gently stir to combine. 5. Place in the fridge until using. 6. Enjoy chilled.

For the salad: in a bowl, add all the ingredients and toss to coat well. Cover the bowl and keep aside for about 30 minutes. Now, place in the fridge to chill completely. In another bowl, add the dates, whipping cream, yogurt, white sugar, orange rind and orange juice and mix until well combined. 5. Refrigerate to chill for about 3 hours. 6. Divide the salad onto serving plates and top with the dip. 7. Enjoy with a garnishing of the pistachios.

Directions 1. For candied nuts: in a skillet, add the honey, peanut oil, vanilla, sugar and salt over medium heat and cook just boiling, mixing continuously. 2. Stir in the walnuts and cook until caramelized, mixing continuously. Remove from the heat and stir the walnuts continuously for at least 1 minute. 3. Transfer the walnuts onto a plate and gently, toss to avoid the sticking. 4. Keep aside to cool completely. 5. Meanwhile, in a bowl, dip the apple slices into the lemon juice. 6. In a bowl, add all fruits, yogurt and candied walnuts and gently, stir to combine. 7. Enjoy.

For the almond brittle: in a pan, add the remaining 3/4 C. of the sugar and enough water to wet the sugar over medium heat and cook for about 6-8 minutes, stirring frequently. 6. Add the almonds and stir to combine with the sugar mixture evenly. 7. Stir in the ginger and a pinch salt and remove from the heat. 8. Immediately, place the almonds onto a baking sheet and keep aside to cool completely. 9. Then, break the almond brittle into bite size pieces. 10. In a bowl, add the apple slices, raspberries, blackberries and sugar syrup and toss to coat well. 11. Place in the fridge to chill completely. 12. Enjoy with a topping of the raspberry sorbet, almonds brittle and basil leaves.
