Country Potato Dinner Rolls

Ingredients
1 1/8 C. warm water 2 tbsp olive oil 2 tbsp nonfat dry milk powder 1/2 C. dry potato flakes 1 tbsp white sugar 1 tsp dried rosemary, crushed 1 tsp salt 3 C. bread flour
1 1/2 tsp bread machine yeast 1 tbsp cornmeal 1 egg, beaten 2 tsp kosher salt
Directions 1. In the pan of a bread machine, place the warm water, olive oil, dry milk, potato flakes, sugar, rosemary, salt, bread flour and yeast in order as suggested by the manual. 2. Select the Dough cycle and press the Start button. 3. After the completion of cycle, transfer the dough onto a floured surface. 4. Cut the dough into 12 equal sized portions and then, roll each into a 10-inch rope. 5. Coil each rope like a sleeping snake and tuck in the end so that it pokes up through the center. 6. In the bottom of a baking sheet, spread the cornmeal evenly. 7. Arrange the rolls onto a cornmeal lined baking sheet in a single layer about 2-inch apart. 8. With a plastic sheet, wrap the rolls and keep aside in warm place for about 45 minutes. 9. Meanwhile, set your oven to 375 degrees F. 10. Coat the top of each roll with the beaten egg and dust with a little kosher salt. 11. Place in the oven for about 15-20 minutes.

1. In the pan of a bread machine, add the water, flour, powdered milk, sugar, salt, margarine, tomatoes and yeast in order as suggested by the manual. 2. Select the Dough cycle and press the Start button. 3. After the completion of cycle, transfer the dough onto a floured surface. 4. With your hands, knead the dough for about 1 minute. 5. Place the dough into a greased bowl and move until coated with oil. 6. With a lightly wet kitchen towel, cover the dough bowl and keep aside in a warm area for about 15 minutes. 7. Spread the cornmeal in the bottom of a 10x15-inch baking dish evenly. 8. Place the dough onto a lightly floured surface and roll until it fits into the prepared baking dish. 9. With your fingertips, make small wells in the surface of the dough. 10. Coat the top of dough with some oil evenly. 11. With a lightly wet kitchen towel, cover the dough for about 30 minutes. 12. Meanwhile, set your oven to 400 degree F. 13. Spread the Parmesan over the dough, followed by the rosemary, garlic salt and mozzarella cheese. 14. Bake the bread in the oven for about 15 minutes. 15.
