Sesame shiso rice

Recipes 2 cups. cooked rice (short grain) 12 shiso leaves (add more leaves if you like). Finely sliced into strips 6 pieces umeboshi (Japanese pickled plum). Pitted and chopped 2tbsp. sesame seeds, nicely toasted Directions In a clean deep bowl, combine the cooked rice, umeboshi, shiso leaves, and sesame seeds. Serve it, simple, and delicious! Preparation Time: 10 minutes Total time: 15 minutes Yields 4 servings

Tamagoyaki; bento box rolled omelet

Recipes 2 large eggs ½ nori 1 ½ tsp. white sugar 1tsp. milk 2tsp. chopped carrots 2tsp. finely chopped spring onions 2tbsp. canola oil Directions In a clean small bowl, whisk the egg, milk, sugar, and nori. Set aside Heat the oil in a large clean nonstick skillet Toss in and fry the onions and carrots for 1 minute Remove from the heat and pour content into the egg mixture. Stir well and pour back into the greased saucepan When the egg begins to form, roll it over to form a wrap Sauté for 2 minutes, allowing it to cook through

Japanese jiggly rice balls

Recipes 70g Japanese rice. Cooked to tender 6tbsp. soy sauce 1lb cooked tuna Directions Preheat grill Scoop the cooked and cooled rice into your palm or use an onigiri mold to form a ball of rice. Make an opening in the ball and add the filling, tuna, and close it back. (wrap as many balls as you can) Grease the baking pan with cooking spray and place the balls into it Grill it in a pre-heated oven for 12 minutes, turning occasionally till it is fairly tanned. Remove from heat and paint with the soy sauce Return to heat and serve! Serve! Preparation Time: 10 minutes

Bento ramen eggs

Recipes 6 large eggs 1tbsp. baking soda Seasoning sauce ¼ cup. Sake ¼ cup Mizkan Bonito flavored soup base or any soup base 5tbsp. soy sauce 4tbsp. mirin Directions In a small saucepan, pour in water add the baking soda, bring to boil. Add the eggs and cook for 10 minutes when the water boils In another saucepan, stir in all the sauce Recipes and cook for 5 minutes. Turn out the heat and sit it for cooling When the egg is done, remove and ice-cool it. Crack and peel the shell, place in a container Pour the cooled sauce over the eggs, making sure the eggs are completed immersed in the sauce. Leave it in the refrigerator overnight When ready, remove from refrigerator slice each into half, and serve Have fun!

Recipes 2 ¼ cup Japanese mayonnaise 1 ¼ tsp. garlic powder 1 cup. Ketchup 1tbsp. paprika 3 ¼ tbsp. sugar 2tsp. onion powder 1 ¼ tsp. cayenne pepper 1tsp. sea salt 1 ½ tsp. sriracha sauce 1 cup. water Directions In a clean large bowl, pour in all the Recipes Stir and beat well to mix till it is lump-free Stand it in the refrigerator till you are ready to use it Serve it with rice, pasta, or vegetable salad dressing

Japanese salmon and cucumber bites

Recipes 1 cucumber. Boldly sliced ½ pound salmon fillet 1 ¼ tsp. soy sauce 2tbsp. scallions. Finely minced 1tsp. mirin 1 Ichimi togarashi (Japanese chili pepper) 1tsp. sesame oil ½ tsp. black sesame seeds Directions In a small mixing bowl, combine the salmon, soy sauce, scallions, sesame oil, and mirin. Place cucumber slices on a platter, spoon a scoop of the salmon on it, and drizzle remaining scallion and sesame seeds Enjoy! Preparation Time: 10 minutes Additional time: 5 minutes

Mochi sweets

Recipes 1 ½ cup. Pre-made Anko 11/2 cup. water 1 cup. Katakuriko (corn starch) ½ cup. sugar 1 ¼ cup. shiratama-ko (rice flour) Directions Heat ½ cup. Water. Add ½ cup. Sugar, bring to boil Toss in ½ of the Anko powder. Stir well to mix Add more water if it feels dry, stirring till it forms solid. Let aside to cool When cooled, scoop content and mold into 10 or more small balls Let’s make the mochi Mix the remaining sugar and water in a small bowl, set aside Pour the rice flour into a heat-resistance bowl Carefully pour the sugar mix into the flour, stirring to form a dough Place it in the microwave and heat up for 3 minutes

Remove from the heat and stir again. Return to the microwave and heat for another 2 minutes till the dough rises a bit Spray some katakuriko on the surface, remove the dough, and place it on the floured platform. (be careful not to burn your hands as the dough will be hot) Knead it gently, cut into balls and flatten each ball. (you should make the same number of balls as the Anko) Place an Anko ball in each flat dough, roll it to form a ball Display them on a platter and serve Enjoy! Japanese curried balls (Kare pan)

Recipes 150g flour 15g plain flour 15g white sugar 3g instant yeast A pinch of salt 120g milk 30g butter 1cup. Panko 2tbsp. vegetable oil Curry filling 100g beef, minced 1 medium onion, chopped 2 potatoes, cooked and mashed 2tbsp. garlic powder 1 carrot. Finely diced

1tbsp. garam masala 60g curry roux Directions Dough In a small bowl, carefully combine milk, yeast, and sugar. Cover the bowl and set aside In another large clean bowl, mix the floured content with salt Create a well in the middle of the flour and pour in the liquid mixture Melt the butter and add to the well Mix well to form a dough, continue kneading till it gets elastic Cover dough and allow 1 hour for rising Make filling Heat the oil in a clean medium saucepan, stir in the carrots, onions, garlic powder, and cook to tender Add the beef and some water to cook for 20 minutes Reduce the heat and fold in the curry and masala. Stir it to mix Add the mashed potato and mix well to set Preheat oven to 250 degrees When the filling is cooled. Divide the dough into balls knead it on a floured surface, spoon some filling on the dough piece, and roll into a fine sturdy ball Repeat same for the rest, paint each with the oil and toss the filled dough over the panko Arrange dough in a ready baking tray and bake for 20 minutes Serve with love! Japanese teriyaki meatballs

Recipes 1 (30ounce) pkt. frozen meatballs 1 (14ounce) teriyaki sauce or you make yours Cooked rice 1 cup pineapple bits Directions Over medium heat, toss thawed meatballs, teriyaki sauce into a large skillet Add the pineapple cubes and stir to mix. Turn off the heat Scoop a sizeable portion of rice into a place and pour the ready meatballs over it Serve with love! Preparation Time: 20 minutes Cooking Time: : 7 minutes Total time: 17 minutes Yields: 6 servings

Crispy Japanese potato croquette

Recipes 1 cup. Panko. Bread crumbs 3 cups. mashed potato. (peel, boil, and mash sweet or Irish potato) 2 large eggs, beaten 1tsp. curry powder 1 cup. White flour 1tsp. sea salt 1tbsp. black pepper 1 cup. Coconut oil Directions Mix the mashed potato with curry, salt, and pepper. Set aside Scoop the potato mixture into your palms and make it into patties Heat the oil in a large skillet while making the patties Coat each Pattie with flour and dip into the egg and finally roll it on the breadcrumbs.

Nori deviled egg

Recipes 7 large hardboiled eggs. Cracked and cut in halves 4 nori sheets. Cut into strips ½ cup mayonnaise 2tsp. rice vinegar 2tsp. wasabi paste ¼ tsp. sea salt Recipes Remove yolk from eggs and mash Add the mashed yolk to mayo, salt, wasabi, vinegar, and mix to a perfect paste Arrange the egg whites on a plate Scoop and drop content inside the well of each egg white Wet the nori strips and place them on each stuffed egg Serve with delight! Preparation Time: 10 minutes Total time: 12 minutes Yields: 12 servings

Tofu in black pepper sauce

Recipes 1 cup. Corn starch 1 ½ tsp. white pepper 16oz firm tofu, perfectly drained 4tbsp. vegetable oil 1tsp. kosher salt 2 scallions, finely sliced 3 red chili peppers, seeded and nicely sliced Directions Make sure tofu is well-drained and pat dry with a paper towel. You can press a heavy cutting board on it to get all the fluid out. Slice the tofu into fine sturdy cubes Mix the cornstarch with the white pepper and salt. Toss the tofu into the flour mixture, take care to ensure the cubes are well covered. Sit them in a Ziploc bag for 2 minutes Pour the oil into a nonstick skillet, when hot, fry the tofu cubes to crispy

cubes Fry in batches and Garnish with the sliced pepper and scallions Serve with love! Note: leave the tofu in the Ziploc bag while awaiting frying to prevent it from draining more water and soiling the cornstarch seasoning. Japanese fruit skewers

Recipes 2cup. Strawberry. DE hulled and tips removed 12 green olives 2 cup. Pineapple cubes or 1 can of pineapple 2cup. Sliced kiwis 2 cup. Blackberries 2 cup. Blueberries 9 skewers or toothpicks Directions Drain excess fluid from the fruits and fix them alternatively onto the skewers Arrange the stuffed skewers in a tray and sit in the refrigerator for 1 hour Remove and serve when ready Enjoy! Japanese fancy teriyaki

Recipes 2lb salmon 3tbsp. chopped green onions 2tbsp. black and white sesame seeds ½ cup extra virgin olive oil Teriyaki sauce 4tbsp. soy sauce 1 cup mirin 2 ½ cup. Sugar Directions Make the teriyaki sauce by add all the Recipes under its heading into a saucepan and cook it under low heat till it thickens. Remove from heat and set it for cooling Pour some oil into a nonstick skillet and place the salmon in there. cover the skillet and cook the salmon under moderate heat till evenly brown. Dish into a platter and drizzle the teriyaki sauce over it And garnish with white sesame seeds and chopped green onions

Soyi marinated mushrooms

Recipes 4 packs of enoki mushrooms or your preferred mushroom 2tbsp. soy sauce 3tbsp. sunflower oil 3tbsp. rice vinegar 3tbsp. mitsuba. Nicely chopped 2 red chili pepper. 1rsp. Kosher salt 2tbsp. green shiso. Finely chopped Directions Over low heat, pour the oil into a saucepan and heat it Add the mushrooms to the hot oil and stir fry till it absorbs all the oil Turn off the heat and stir in the soy sauce, vinegar, shiso, mitsuba, salt, and pepper. Serve or refrigerate it when cooled. Enjoy! Preparation Time: 15 minutes

Japanese keto-okra bowl

Recipes 2 okra fingers 2tbsp. soy sauce 2tbsp. bonito flakes 2tbsp. swerve/monk fruit 2tbsp. water 2tbsp. sake 2tsp. sesame seeds, toasted 2tbsp. bonito flakes Directions Boil 2 cups of water in a stovetop In another cooker pot, stir in the soy sauce, bonito flakes, 2tsp. water, sake, swerve, and sauté for 1 minute Return to the now boiling water and toss in the okra, cook for 3 minutes or till soft Drain and chop into bold slices Place the sliced okra in a bowl and pour the sauce over it

Japanese potstickers

Recipes 1ounce wonton wrappers 1 ½ cup chopped cabbage ½ cup. Asian scallions, chopped ¼ cup. Carrots. Chopped 1pound ground pork sesame oil 1garlic clove 1 garlic, finely chopped 1tbsp. soy sauce 1 ginger, grated Directions Make filling Combine the pork, carrot, cabbage, sesame oil, garlic, soy sauce, and ginger till well incorporated. Spread the wonton wrappers on a floured platform

Scoop a spoonful of filling onto the center of each wrapper Moisten the wrappers with water and fold each into a wrap Tweak the edges to make a pattern Place dumplings in heated oil and fry till golden or cook in a steamer pot Enjoy! Lemony Edamame

Recipes 500g edamame. (thaw if frozen) 1 ½ tsp. seasoned nori sheets. Nicely crumbled 1 ½ tsp. shichimi togarashi or any spicy Japanese seasoning ½ cup fresh lemon juice 1 cup. Sunflower oil for frying Directions Whisk the lemon juice with half of the oil to make a lemon dressing. Set aside In another bowl, mix the nori, salt, and togarashi to a fine blend Boil a little quantity of water and add salt to it. When boiled add the Edamame to blanch for 25 minutes. Cool it off in ice-cold water, drain and set aside Arrange the edamame in a tray and drizzle some oil over it Preheat a grill and grill the edamame for 3 minutes or till charred Remove from heat and sprinkle the seasoning and lemon dressing Serve in a platter

Japanese eggy oyakadon

Recipes 1 large boneless chicken thigh. Nicely cut to bite sizes 3 large eggs, beaten 2 ¼ tbsp. mirin ½ cup. Dashi 2 bowl. Cooked rice (short grain) 2 ¼ tbsp. soy sauce 1 large yellow onion, thinly sliced 1 spring onions, (green part) nicely sliced ½ tsp. sugar 1 ¼ tbsp. Japanese sake Directions Stir in mirin and sake in a saucepan and boil over low heat Add the soy sauce, dashi, sugar, and onions. Cook for 3 minutes

Toss in the chicken and sauté for 5 minutes Add the spring onions, drizzle in the beaten eggs, (don’t stir) When the egg begins to set, please turn off the heat Dish your cooked rice in a bowl and pour egg content over it Top with nori or parsley Enjoy! Japanese ginger sea bass

Recipes 2tsp. miso white paste 6oz sea bass piece 1 ¼ tsp. mirin 1tsp. fresh ginger juice 1tsp. sugar 3tsp. sake Directions In a clean medium bowl, combine all the Recipes except the sake. Mix well and set aside. Place fish piece in the mixed content add the sake and toss till well covered Sit it in the freezer for 4 hours Preheat the grill and place fish on a grate Grill it, toss from side to side till completely brown and cooked. Recipes 1 can. sweeten condensed milk 1 can. fruit (800g) cocktail. drained 1 bottle (12oz) kaong. Perfectly drained and rinsed 1 cup. coconut meat. Finely cut to strips 1 bottle(10oz) coconut gel 1 (220ml) pack all-purpose cream 1 cup. Cheese. cut into cubes Directions In a small bowl, mix the condensed milk with cream Pour other Recipes into the ready milk mixture. Toss well to mix Cover bowl and chill for 3 hours Remove from freezing and serve! Have fun! Preparation Time: 10 minutes Freezing time: 3 hours

Easy Japanese sushi

Recipes 1 ½ cup sushi rice or any rice 1tsp. sea salt 1 1/3 cup water 4tbsp. rice vinegar 1 ¼ tbsp. sugar 1 cucumber. Sliced 1 avocado. Pitted and cubed 1 nori sheet Directions Add rice to a bowl of water, keep rinsing till water is less cloudy Pour rice into a saucepan, add salt and cook till liquid is completely absorbed Turn out the heat and leave for cooling In a clean jar, combine the vinegar with sugar. Stir to dissolve and pour over rice Stir with a bamboo paddle to mix and pour into the nori sheet

Lay the avocado diced on the rice and cucumber Roll the sheet to a wrap Cut into mini rolls Serve with love! Preparation Time: 20 minutes Cooking Time: : 10 minutes Total time: 30minutes Yields: 6 servings

Crunchy delicious chicken with dipping sauce

Recipes 1lb boneless chicken thigh or breast. Cut into cubes or strips 3 ½ tsp. soy sauce 2tsp. freshly squeezed ginger juice (pound the ginger, add 1 tbsp. water and extract the juice) 3 tbsp. Japanese mirin ½ cup. Canola oil for frying 8tbsp. Japanese cooking sake 3tbsp. sesame seeds ¼ cup. Cornstarch Directions In a large bowl, place chicken and season with the ginger juice, Japanese sake, soy sauce, and mirin. Marinade for 25 minutes Drizzle the cornstarch over the chicken, making sure they are well-cover with the flour. Dust excess flour away and lay in a platter

Heat the oil in a skillet and deep-dry the chicken Whisk together 3tsp. white miso paste, 3tbsp. mayonnaise, 3tsp. Japanese rice vinegar, or apple cider vinegar, a pinch of salt, and 2 tsp. honey Bring out the chicken when cooked through and brown Serve with the mayo dip or your preferred sauce Have fun! Vegan-inspired Japanese potato salad

Quartered and thinly sliced 3 hardboiled egg 1 red onion bulb. Finely sliced Directions Place the sliced cucumber in a bowl, sprinkle some salt over them and leave it to stand for 12 minutes. Drain out the excess water and dry the cucumbers in a paper towel In a small bowl, mix the mustard, mayo, and vinegar In another large bowl, fold in the mashed potato, mayo mixture, eggs,

Soy cucumber sonomono

Recipes 1 cucumber. Sliced 1 ½ tsp. kosher salt 2 tsp. mirin 4g dried seaweed mix 2 ¼ tsp. rice vinegar 2tsp. soy sauce 2tsp. sesame seeds (for garnishing) Directions In a small bowl, combine the vinegar, mirin, and soy sauce; set aside Place sliced cucumbers in a bowl and drizzle the salt over them. Leave it cover for 7 minutes to emit all fluid Drain out the water and leave them in a bowl Put the seaweed in a bowl of water, leave it to stand for 8 minutes. Drain out the water Place the drained cucumber slices and seaweed in a bowl. Pour the soy mixture it, drizzle the sesame seeds

Serve with love! Preparation Time: 10 minutes Additional time: 5 minutes Total time: 15 minutes Yields: 4 servings

Agar fruity salsa

Recipes 1 stick. Kanten agar (fruit jelly) 1 small can. mandarin segments 40g shiratama-ko (rice flour) 3tbsp. pre-made red beans 10kg. sugar 1 cup. Mixed fruits of kiwis, strawberries, etc. Directions Place the Kanten agar in cold water, allow soaking till it gets soft Boil 250ml of water, drain the tender Kanten from water, and add to the boiling water. Add sugar to it and boil till Kanten is well dissolved. Pour into a bowl, allow to cool and freeze it in the freezer to set Pour the shiratama-ko into a bowl, add some water and stir to form a dough. Roll it and cut into balls Boil another large pot of water, add the shiratama-ko balls when the water boils and cook till the balls float above the boiling water. Remove the balls and cool them in cold water

Place the cut fruits in a bowl, add the ready shiratama-ko balls, scoop a portion of the red beans, mandarin, cut the set Kanten into cubes and add to the bowl. Drizzle the mandarin syrup or soy sauce if available and serve Have fun! Preparation Time: 40 minutes Cooking Time: : 40 minutes Total time: 1 hour 30 minutes Yields: 4 servings

Japanese mushroom noodle soup

Recipes 2oz Buna shimeji mushroom 1 bundle. Soba noodles or your preferred noodles. Boiled and drained according to Directions 3tbsp. mizkan soup base 2 boiled eggs, cracked and halved 1 bunch baby bok choy or lettuce 2 cup. Water 2tsp. white sesame seeds Scallions, chopped Directions In a medium saucepan, boil the water and add the soup base and baby bok choy, and mushroom. Cook for 2 minutes. Tonkatsu baked pork delight

Recipes 1 ½ cup. Panko (Japanese bread crumbs or your regular bread crumbs) 1 large egg. Nicely beaten 1 ½ tbsp. neutral oil 3tsp. white flour 1tsp. kosher salt 1tbsp. black pepper 3 boneless pork loins Tonkatsu sauce Shredded cabbage (preferred quantity) for serving Directions Preheat oven to 300 degrees Toss the panko into a dry skillet and toast. Stirring and drizzling a little oil till it turns golden Season the pork with the salt and pepper and toss the flour over it. Making sure all sides of the pork loins are covered with the flour

Dip the floured loins into the beaten egg and toss it over the cooled panko. Make sure that all sides are nicely covered with the crumbs Place the pork in a baking tray and bake for 40 minutes or more depending on the thickness of it.
