VIRGINIA HEFFIN6T0N is a one-time food editor of Better Homes & Gardens who has settled, for the moment at least, in Long Beach, California, with the Independent Press-Telegram after a decade of writing here and there on the subject of exotic edibles. She is a four-time winner of the Vesta Award, the top national prize in foods journalism given annually by the American Meat Institute, and has authored three other books, dealing with Florida, New England, and Caribbean cookery. Virginia earned a Bachelor of Science degree in home economics journalism at Iowa State University, spent nine years at Better Homes & Gardens, was food editor of the Miami Herald, and studied island cooking in places like Grand Cayman, Martinique, and the Virgin Islands before arriving in Long Beach. The question most frequently asked by hostesses, she says, is "What shall serve with I

And

speaking of that, you'll want to

know

these

other "Pro" secrets about ingredients that go into the perfect rum drink.

About Fruit— Mexican lime juice is the best for mixing with rum. Domestic lime juice is second, and lemon juice should not be used at all. If fresh limes are not available, then frozen lime juice may be used.

About Sugar— Simple syrup should be used in place of granulated sugar— easy to make by combining 2 parts of hot water to 3 parts of sugar. About Mixing— Rum drinks should either be shaken by hand or by using a malted-milk type mixer. Mixers with knife-type blades in the bottom of the mixing shakers vidll make the drinks mushy. Mix nun drinks for only a very short time, usually not more than 4 to 6 seconds. Mr. Lemon Hart suggests that you follow these simple instructions when preparing the recipes listed on the following pages. You can be sure that the results will be the most pleasant, most exciting rum drinks youVe ever tasted.

Then came the onslaught

of Japanese, Chinese,

mainland American, Korean, Portuguese, and Scot among others. This mixture gave birth to the Polynesian cooking we know— and like— today. Recipes in this chapter are compatible with the luau, barbecue, or any occasion when good friends get together for food, fun and happy libation. Especially popular on this side of the Pacific are rumaki, tempura, and grilled teriyaki called pupu—a. blanket term for any small tidbits.

FRIED CHEESE FONDUE (Cheese doesn't have to be melted to be fondue— it can be fried. Wedges of Camembert are coated in bread crumbs and toasted in hot fat. Let guests spear a wedge of the coated Camembert on long-handled fondue forks and fry in the deep hot fat about 1 minute. Drain briefly on paper towels, then eat immediately. If you like, serve thin toast or crackers on the side. Allow about 1 package Camembert per person. The egg white and bread crumbs go slightly further.
