First Things First This is not a book about the science of making coffee… but before diving into the recipes there are a few things you might need to know, and at least one thing you might need to buy, to successfully make your own favorite fancy coffee drinks at home.
You Don’t Need An Espresso Machine
Although the Signature Latte recipes in this book call for espresso, this particular ingredient can be substituted by a strongly brewed, concentrated coffee which you can make using whatever you have: a standard drip or pod coffee maker, pour over, french press, etc.
You can even use instant coffee-- no machine needed!
Technically, that makes a “Cafe au Lait”... This book provides recipes to make delicious, fancy coffee-shop inspired signature drinks at home. It’s about taste, without dwelling on the science or technicalities.
With that being said, if you do want to make real espresso at home (crema and all) without investing thousands of dollars: try a Moka pot or an Aeropress.

Modifying Measurements
If you don’t have one yet, you may want to get a mini (1 oz or 2 oz) measuring cup to keep in your home coffee station. They look like a shot glass with lines that help measure out tablespoons and ounces.
Also, they can be inexpensive (often under $1).
Use accurate measurements instead of just “eyeballing” ingredients for consistently delicious drinks. Even though a recipe says 1 oz. vanilla syrup, I personally use about 1 1/2 oz vanilla syrup mixed with 1/4 oz of ‘sweet milk sauce’ because I like a sweeter, creamier drink. But that’s not a universal preference.
So the measurements given are just a safe point to start from... then feel free to adjust according to your own “magic measurements”.
If lattes aren’t your cup of tea: the amount & order of ingredients can be adjusted to create a different type of fancy coffee drink. The biggest variable with most popular espresso drinks is the ratio of milk to espresso (or coffee), but not all contain milk.
Keep in mind that the ingredients and portions in these Signature Latte recipes can all be modified to fit your favorite drink.
• Lattes have an even distribution of espresso, steamed milk, and milk foam. An iced latte will typically have a 2:1 ratio of milk to espresso.
• Cappuccinos have a creamier texture due to a higher milk-to-espresso ratio, and more milk foam than a latte.
• Mochas are generally made with equal portions of espresso, chocolate sauce, steamed milk, and whipped cream.
• A Flat White does not have milk foam, only steamed milk with a 2:1 milk to espresso ratio.
• A Red Eye is a single shot of espresso topped with coffee, and for the real adrenaline junkies: a Black Eye is a double shot of espresso topped with coffee.

Using Non Dairy Milk
It should go without saying in todays world, but whenever a recipe calls for “milk” that means any milk of your choice.
Oat milk, or soy milk, are the two best non-dairy options for hot specialty coffee drinks requiring frothed milk. That’s not to say you can’t use coconut or almond milk for these recipes, but those choices are a better fit for iced lattes where frothing isn’t required.
If you do use dairy milk, whole milk is the #1 best choice for frothing.

Warming & Frothing Milk Frothed milk is essential to make most hot specialty coffee drinks, and it’s not just for playing around with latte art!
If you prefer iced coffee drinks then you can skip this entire section… or keep reading because there’s a chance you’ll want to pick up an automatic milk frother for other hot beverages!
The best way to warm & froth milk is using an automatic milk frother. An automatic milk frother is a game changer not only for fancy coffee drinks (like lattes & cappuccinos) but also for hot cocoa, steamers, matcha, and any other hot milk beverages you crave!
Although there are a few similar styles of automatic milk frothers available, I *highly* recommend the Instant Pot brand milk frother for two important reasons:

It has multiple settings (Creamy Froth, Thick Foam, Cold Froth, and the ability to just Warm milk). Most automatic milk frothers only have one setting.
At only $30, it is priced very competitively! (Other name brand automatic milk frothers can run anywhere from $80 or much higher!!!)
Any automatic milk frother is the best option for home use because you can “set it and forget it”. This gadget will warm your milk to the perfect temperature and create the ideal creamy texture milk froth.
With that being said, $30 can be a subjective price for what’s affordable.
