In a skillet, heat the 2 tbsp of the clarified butter and sauté the onion and garlic till tender. 5. Stir in the salt, black pepper, wine and lemon juice and simmer for about 2-3 minutes. 6. Remove from the heat and stir in the cold butter. 7. Meanwhile in a bowl of cold water, soak the mussels for about 8 minutes. 8. With a sharp knife, remove the beards and rinse under cold water. 9. In a skillet, heat the oil and cook the mussels, covered for about 2-6 minutes. 10. Stir in the onion and garlic and cook, covered for about 1 minute. 11. Stir in the lemon butter, Pernod, basil and lemon juice and cook for about 45 seconds. 12. Discard any unopened mussels. 13. Serve immediately..

Place the remaining enchilada sauce over the enchiladas and sprinkle with 1 C. of the Cheddar cheese. 12. With a piece of the foil, cover the baking dish. 13.
