Introduction

In this section, as we talked about in the first section, we will help unfold all the awesome health benefits provided by the little seeds we call chia seeds. High in fiber: finding foods high in fiber is not only important because it can help you being regular with your bowel movements, but it can also help you reduce your cholesterol levels. Only 1 ounce of chia seeds can impressively provide you about 10 grams of fiber; that is just about half of your recommended fiber intake for the day! Diabetic prevention: Diabetes is scary and more common than you know. If you are predisposed to the disease, please read about chia seeds and how they can help you. What happens when you ingest chia seeds is that they help control your high blood sugar by slowing down the circulation of sugar in the blood. So, they do help monitor just as always consult your specialist if you need to be on a special diet because of the particular medical condition. Calcium intake: It is so important for your bone and teeth health to get enough calcium a day; you need to read this. Chia seeds can contribute about

20% of your daily recommended calcium intake with just as little as 1 ounce of them ingested. Calcium is helping your body avoid blood clotting and regulate your heart and blood pressure. Other vitamins and minerals: Other than calcium, chia seeds can also provide your body with the following: phosphorous, potassium, zinc, magnesium, manganese, and vitamin B. Weight loss helper: Now, everyone will tune in here because everyone at some point or another wants to shed a few pounds off their bodies. There is never a miracle ingredient or food that can make you lose weight; you should always aim for a healthy diet and regular exercise. But, here is how chia seeds can contribute: because of their amount in fiber, it appears that chia seeds can, on the same token, help dieters reduce their intake in carbs and sugar, as they get a satisfying amount of fiber and proteins. They feel full, and they will not overeat as much. Filled with antioxidants: We talk a lot about antioxidants lately because we care more and more about feeling and looking younger as long as possible. Antioxidants contained in chia seeds are important enough to help to keep you look young. Another big plus side is that antioxidants will help also prevent cancer. Do you need more convincing about the multiple amazing benefits of the little chia seeds? That is okay if you do! We will add more to your knowledge in the last section of the book, but for now, let us start cooking!

Almond Milk, Pecans and Chia Seeds for Breakfast

This recipe is so good making you will think to yourself. How did I go so long without it? It can be served, of course, as a breakfast dish, but always as a dessert. This is how good it is. Also, feel free to choose other nuts than pecans if you prefer, such as walnuts, almonds, or cashews. Let us begin. Serving Size: 2 Cooking Time: 20 minutes Ingredients: 2 cups almonds milk Handful of roasted pecans ½ tsp. chia seeds Few drips of honey Instructions: Get two tall glasses out. Divide the milk equally and the chia seeds next.

Let the seeds soak in the milk and get bigger. Add the pecans on top and the touch of honey. Serve very cold.

Chia Seed and Tuna Patties

This is the perfect example of adding chia seeds to an existing recipe. I was trying to think about what recipes I make quite often that would have a benefit from a little dose of chia seeds. Then, I thought of a few options. These tuna patties are easy to make, and adding chia seeds to them does not alter the taste. Also, this is one of the recipes I did teach my college student because it is cheap and rich in proteins, so I feel extra good that he would also add some chia seeds to the mixture. Serving Size: 4 Cooking Time: 35 minutes Ingredients: 2 large drained cans white tuna in oil 1 tbsp. chia seeds 2/3 cup panko breadcrumbs 1 large egg 1 minced green onion ½ tsp. onion powder

½ tsp. horseradish sauce 1 tbsp. mayonnaise ½ tsp. Lemon juice Some frying oil Instructions: In a large mixing bowl, combine the eggs, chia seeds, lemon juice and mayonnaise. Let the mixture sit a little. Add the drained tuna, breadcrumbs, spices, horseradish sauce, and green onion. Use your hands to form the tune patties. You probably have enough to make 4 large patties or 6 smaller ones. Heat the oil in a large pan to a frying temperature. Add all the patties in the pan and flip after 7-8 minutes cooking on one side. Cook on the side the same amount of time and remove from the pan. Place on a paper towel so the excess oil can be absorbed. Serve with tartar sauce or horseradish sauce as you wish.

Sushi Looking Banana and Chia Seed Fun Bites

I think this recipe is so much fun! Also, it is extremely easy! Gather your little ones around and make them together. Choose your bananas carefully. They cannot be too mushy, but, of course, you want them to be ready and sweet enough to eat. Get your chia seeds out and let us begin! Serving Size: 2-3 Cooking Time: 10 minutes Ingredients: Some peanut butter 2 large firm but ready bananas 1 tbsp. chia seeds Some lemon juice Instructions: Peel the bananas and slice them. Place them on the plate and drizzle some lemon juice.

Place the seeds into a small bowl. One by one, spread some butter on the outside of the banana slices and dip them in the chia seeds. Enjoy them as you would do with sushi!

Fruit Platter Garnished with Chia Seeds and Honey

I think when you make any fruit salad or any fruit palter, you need to ask yourself a few things. How do I make it stand out? Especially if you are going to bring it as a dish at a potluck or friend’s house. Secondly, you need to make sure it is as nutritious as it can be. The chia seeds will fulfill the two criteria! Serving Size: 2 Cooking Time: 25 minutes Ingredients: ¼ cup pineapple juice 2 sliced kiwis 2 cups fresh cubed pineapples 2 cups seedless red grapes ¼ cup cherries maraschino 1 tbsp. chia seeds 1 tbsp. honey

Instructions: In a large mixing bowl, combine all the fruits. Add the juice and honey and stir. Sprinkle the chia seeds on top and serve cold.

Healthy Spinach, Chicken, and Chia Seed Salad

I think it is imperative you should choose some dark leafed greens here to make your salad with. There are a few reasons for it. They are richer in iron and fiber, and they will allow the chicken and seeds to show their range of colors better. I absolutely love baby spinach leaves, so this is usually my goto salad choice. Serving Size: 4 Cooking Time: 35 minutes Ingredients: 4 cups baby spinach leaves ¼ cup dried cranberries ¼ sliced red onion 2 cups grilled chicken 1 tbsp. chia seeds 1 cup crumbled goat cheese Honey mustard dressing

Instructions: Carefully wash the spinach leaves and make sure you drain them very well. Dive the spinach into 4 plates. Line up the other ingredients. Also divide the red onions, cranberries, and cheese into 4 plates. Add the chicken and chis seeds. Top it off with honey mustard dressing and enjoy! You can also add croutons if you like.

Chia Seed Cookies with Sweet Icing

Can cookies be healthy? Why not? I say! They can at least be healthier than others, and this is exactly what we are aiming for here. The icing does not need to be as healthy as the cookie batter; we understand you can have some sweets in your life as well. Serving Size: 12 - 16 Cooking Time: 40 minutes Ingredients: 2 cups coconut flour ¼ cup all-purpose flour ¼ cup coconut oil, room temperature ½ cup brown sugar 2 medium eggs 1 tbsp. chia seeds Pinch of salt ½ tsp. baking powder ½ tsp. baking soda

Vanilla icing 1 cup powdered sugar ½ cup heavy cream 2 tbsp. unsalted butter 1 tsp. vanilla extract Instructions: Preheat the oven to 350 degrees F, Grease a baking sheet and set aside. Next, combine the baking soda, baking powder, flours, sugar, and salt in a large mixing bowl. In a second bowl, combine the wet ingredients: coconut oil, eggs, and chia seeds. Then, add the wet ingredients to the dry ones and combine. Dump some tablespoons filled cookie batter on the baking sheet. Make sure you keep some distance between them. Bake for 12 minutes. Meanwhile, prepare the icing. Use a hand mixing to combine the sugar, milk, butter, and vanilla. Once all the cookies are done, let them cool down. Spread some icing on the cookies and perhaps a few extra chia seeds to decorate.

Ready to Go, Ready to Eat, Healthy Chia Seed Bars

We love making energy or chewy bars any day. They are so convenient and yummy. They please kids perfect after school snacks. They also help grownups keep going for the entire day as a mid-day office snack or a pre-workout light meal. No matter what reason you are preparing them, we approve! Serving Size: 12 Cooking Time: few hours Ingredients: ¼ cup chopped walnuts ¼ cup almond butter ½ cup chopped pecans ½ cup unsalted butter (room temperature) 1 cup oats 1 tbsp. maple syrup 2 tbsp. chia seeds 3 tbsp. all-purpose flour Pinch of cinnamon

Instructions: Grease a baking sheet and set aside. In a large mixing bowl, combine the flour, oats, cinnamon, and nuts. In a separate bowl, combine the almond butter, honey, and unsalted butter. Dump the wet mixture on the dry one. Combine with your hands and make sure you the mixture can stick together exactly right. Press it into the baking sheet, cover it up with plastic wrap and refrigerate for about an hour. Cut the mixture into bars and place them into storing container.

Salmon Crusted with Chia Seeds and more

Pick your salmon wisely and fresh. Pick your chia seeds fresh and abundant to make this delightful crust. Of course, you will need to add many other ingredients to bring some taste alive, as the chia seeds are kind of plain and not what you want to pair your fish with. Serving Size: 3 – 4 Cooking Time: 50 minutes Ingredients: 4 salmon fillets 1 tbsp. unsalted butter Salt, black pepper 1 tbsp. chia seeds 1 tsp. cayenne pepper 1 tsp. lime juice 1 tsp. Dijon mustard Instructions:

Preheat the oven to 375 degrees f. Grease a baking dish and set aside. In a bowl, combine the lime juice, mustard, butter, and seasonings. Brush the butter mixture onto the fish fillets. Dip the salmon fillets all around with chi seeds. Bake the fish for 22-25 minutes and enjoy with a side of grilled vegetables.

Oven Baked Bread with Chia Seeds and more Seeds

Making bread seems to be in fashion again! That is great news! Nothing like being able to choose and control what your bread contains. You are more than ever in control of your health by adding the correct ingredients into your bread and other dishes. Serving Size: 6 – 1 Cooking Time: 60 minutes Ingredients: 1 tbsp. chia seeds ½ tbsp. baking powder ¼ cup coconut oil, room temperature ¼ cup coconut flakes, unsweetened 2/3 cup almond flour ½ cup all-purpose flour ½ cup almond milk 1.2 cups brown sugar 2 large eggs

Pinch salt Instructions: Preheat the oven to 350 degrees. Grease a bread pan. Then, set aside. In a large mixing bowl, combine the dry ingredients: flours, salt, baking powder, brown sugar, coconut flakes. In another bowl, combine the eggs, coconut oil, milk and chia seeds. Combine the wet ingredients with the dry ones and make sure it combines well. Dump into the bread pan and bake for 50 minutes in the oven. Let it cool down and slice a piece for everyone.

Sautéed Tofu and Veggies with Chia Seeds

First, kudos for using tofu to make your next stir fry dishes. Perhaps, you are vegetarian or just feel like taking a break from meat for a meal or two. I recommend you to this dish. Next, you can add even more nutritious seeds and make it double-healthier! Choose your sauces and vegetables carefully, as that is where the main flavors will come from in this case. Serving Size: 4 Cooking Time: 45 minutes Ingredients: 1 tbsp. chia seeds. 1 tbsp. sesame seed Sesame oil 1 block tofu, cut into strips 2 tbsp. Teriyaki sauce 1 medium peeled and grated carrot ½ sliced sweet onion 1 tbsp. minced garlic

3 cups fresh broccoli florets ½ tbsp. red pepper flakes Salt Instructions: In a wok or large pan, heat the sesame oil and sauté onion, garlic, chia seeds and sesame seeds for 5-6 minutes. Meanwhile, steam and cook the broccoli and set aside. Add the tofu, teriyaki sauce and seasonings to the pan. Continue cooking, often stirring, for about 10 minutes. Finally, add the broccoli and carrot and cook another 10 minutes or so. Serve on a bed of white sticky rice.

Egg on Rice with Chia Seeds Indeed

What a neat way to serve breakfast! Wait a minute, maybe it looks like breakfast, but it contains rice. Should we call it lunch? Either way, if it contains a nice amount of chia seeds, that’s what we are more concerned about in this situation. Make sure you do season the rice nicely, so it creates a nice flavorful need for this special dish. Serving Size: 4 Cooking Time: 30 minutes Ingredients: 4 cups cooked white rice 2 tbsp. Soya sauce 2 minced green onions ½ tsp. minced garlic 1 cup sweet peas 1 tbsp. fresh minced parsley 1 tbsp. chia seeds 1 tbsp. canola oil

4 large eggs Salt Black pepper Instructions: Let’s fry our rice first. Next, in a large wok or pan, heat the oil and sauté the garlic, green onions and chis seeds for 5 minutes. Add the cooked rice, soya sauce and parsley, and keep combining. Then, in a different pan, heat some oil and cook 4 eggs over, seasoning them with salt and pepper. Serve on a bed of fried rice on each plate, topped with a fried egg. You can choose your favorite hot sauce to use with this dish.

Making some Pancakes Adding Chia Seeds

I have made some pancakes with seeds before. If I recall correctly, it was lemon and poppy seeds. I have also added roasted sunflower seeds before to bread, pancakes, and muffins. So, there is not much difference here, and we will guide you on just how to do so. Serving Size: 4 Cooking Time: 45 minutes Ingredients: 1 tbsp. chia seeds ½ tsp. baking powder ½ tsp. baking soda 2 cups all-purpose flour 1 large egg ¼ cup milk

Some butter Maple syrup or honey when serving Instructions: Firs, in a large mixing bowl, combine the chia seeds, flour, baking soda and baking powder. In a different bowl, mxi the egg and milk. Then, dump the wet ingredients into the dry ones. Combine well. In a medium pan, heat some butter and add ¼ batter. Cook both sides fully and serve 1 pancake per person. Add some syrup or honey depending on your preference.

Graham and Chia Seed Crusted Chocolate Pie

Now, I am so proud of this creation. One day, I was making a key lime pie and its graham crust from scratch. It occurred to me that adding a little chia seeds within the crust mixture would be a great idea. It was an immediate success with the key lime pie, so I decided to create a similar experience but with a chocolate pie this time. Serving Size: 4 – 6 Cooking Time: 90 minutes Ingredients: Crust 1/3 cup butter, melted 1/4 cup sugar 1 1/4 cups crushed graham cracker crumbs (24 squares) 2 tbsp. chia seeds Filling

4 egg whites 2 cups whole milk ½ cup heavy cream ½ cup white sugar 1 tbsp. coco powder Shaved chocolate as topping if you wish Instructions: Preheat the oven to 375 degrees F. Next, in a large mixing bowl, combine the graham crumbs, chia seeds, melted butter and sugar. With a fork, mix well. In a greased pie pan, dump the mixture. With a fork, press down the crust and make it equal all around. Next, bake the pie crust for about 12-15 minutes. Remove from the oven and let it cool down. Meanwhile, you can start on the filling. Then, in a large bowl, combine the egg whites with sugar and use a hand mixer to mix it until it becomes fluffy and white. Slowly add the milk and cream and continue blending with hand mixer. It will be done when consistency is like a pudding. Refrigerate for an hour or so and then dump slowly into the pie crust. Use a spatula to even it out. Add some shaved chocolate to decorate and maybe a handful of chia seeds as well.

Chicken Bites with Chia Seed Breading

When it is time to make breading, you can explore many flavors and textures. Here we decided to make some chicken with a mixture of Parmesan cheese, breadcrumbs, seasonings and our key ingredients, chia seeds. I think kids hardly notice that it is always a good sign! Serving Size: 4 Cooking Time: 40 minutes Ingredients: 4 chicken breasts, boneless, skinless Frying oil 1 large egg 2/3 cup whole milk ½ cup panko breadcrumbs 1 tbsp. Italian seasonings ½ tbsp. chia seeds ½ cup powdered Parmesan cheese Salt, black pepper

Instructions: On your cutting board, arrange the chicken. Cut the breasts into nuggets, removing any chewy parts. Next, get your bowls out. One for the milk and egg, you will wish together. For the other one, you should combine breadcrumbs, chia seeds, cheese and all seasonings. Next, heat the oil into a large frying pan. Put enough to fry both sides of nuggets so they do not stick to the pan. Then, dip each chicken piece into the milk mixture and then the crumb mixture. When the oil is hot, place the nuggets in and cook for about 8-9 minutes on each side. Make sure the chicken is cooked all the way before serving. Serve with your favorite dipping sauce. I love a sweet and sour sauce with the nuggets; perhaps you prefer blue cheese or even ranch sauce, your choice.

Morning Oatmeal, Fruit, and Chia Seed Combo

Making oatmeal for my loved ones is second nature for me. My husband struggles with high cholesterol, so oatmeal has been part of his diet for a long time. As far as my kids, they just love the taste and comfort it gives them before heading to school. I realized that chia seeds could be a healthy addition along with some fresh fruit, and no one has complained to me yet! Serving Size: 2 Cooking Time: 20 minutes Ingredients: 1/2 tbsp. chia seeds 1 cup milk or water Pinch of salt Pinch of cinnamon 1 cup old fashioned oatmeal Instructions: Bring the water or milk along with salt and cinnamon to a boil in a medium

saucepan. Add the oats and chia seeds next. Cook for about 5-6 minutes, stirring occasionally. Remove the oatmeal from the heat and let it sit for a few minutes. Play with the consistency of needed and add some milk. Divide the oatmeal into 2 bowls and add the fresh fruit or even dried fruit of your choice and nuts if you prefer.

Lemon and Chia Seed Muffins

I love anything lemon! Lemon cake, lemon bread, lemon cookies or lemon muffins. The chia seeds will barely be noticeable in this recipe, and that is the way we like it. Make sure you use fresh squeezed lemon and lemon zest so your recipe can be a total success in every way. Serving Size: 8 – 12 Cooking Time: 55 minutes Ingredients: 1 tbsp. lemon juice 1 tbsp. lemon zest 1 tbsp. chia seeds 2 medium eggs ½ tsp. baking soda ½ tsp. baking powder

Pinch of salt 1 tsp. vanilla 2 cups all-purpose flour ½ cup white sugar ¼ cup unsalted butter Instructions: Preheat the oven to 350 degrees. Grease a muffin pan, Then, set aside. Next, in a large bowl, combine the dry ingredients: flour, chia seeds, salt, sugar, baking soda and baking powder. In a second bowl, combine the milk, eggs, vanilla, and melted butter. Whisk the ingredients nicely. Then, dump the wet ingredients into the dry ones. Combine until you see no more lumps. Next, dump the muffin batter into each muffin pan hole evenly. Bake in the oven for 35 minutes. Remove and let them cool down. You could serve with icing on top, depending if you want to make them more of a dessert or not.

Egg Muffins Made with Love and also Chia Seeds

I think making egg muffins is a smart way to feed your family many times or many meals of the day. It is a high protein valuable bite. And now, you are adding chia seeds to it; it makes it extra rich in proteins, minerals, antioxidants, and fiber. What a winning combination! Serving Size: 8 – 10 Cooking Time: 50 minutes Ingredients: 8 large eggs 1 cup cottage cheese 1 cup shredded white American cheese 1 tbsp. chia seeds 2 cups baby spinach leaves 1 tbsp. minced garlic 1/4 diced small red onion ½ tsp. dried thyme 1/tsp ground cumin

Salt, black pepper Some unsalted butter Instructions: Preheat the oven to 375 degrees F. Grease a muffin pan and set it aside for now. In a medium pan, heat some butter and cook the garlic, onion, and spinach for about 5 minutes. Season with salt and black pepper. Set aside when done. In a large mixing bowl, combine the eggs, cottage cheese, chia seeds and American cheese. Add the cooked veggies next and stir again. Fill the muffin pan holes to the top. Bake for about 45 minutes. Let them cool down before you can taste them.

Cream of Zucchini with a Twist of Chia Seeds

I usually make this cream of zucchinis within 20 minutes, with or without chia seeds. Please make sure you do not overuse the chia seeds here because the cream of vegetables should be smooth and not grainy. You will, either way, blend the mixture in a blender to help with its texture. Serving Size: 3 – 4 Cooking Time: 20 minutes Ingredients: 2 medium peeled zucchinis 1 can cream of chicken 3 cups milk 1 tbsp. chia seeds ½ tsp. garlic powder ½ tsp. onion powder Salt, black pepper Minced fresh parsley to decorate

Instructions: First let’s prepare the zucchinis. Remove the skin and cut them in cubes. In a pan, heat some butter and add the zucchini, salt, black pepper and other spices. Cook for about 5-6 minutes, set aside. In a bowl, combine the milk, cream of chicken and chia seeds. Combine. Next, add half of the zucchinis and half of the milk mixture into the blender container. Blend until the mixture is exceptionally smooth. Dump into a large saucepan and set to a low temperature. Add the rest of the ingredients into the blender. Blend again until smooth. Dump the rest of the mixture with the first one into the saucepan. Let the soup simmer until ready to serve. I found myself adding some shaved Parmesan cheese and croutons on top for additional taste. Try it!

This beverage is not only refreshing, but it is cool to look at and serve to your friends. It is one of the perfect summer drinks you can think of. It is cool and healthy. I’m sure you will ask for more! If your kids prefer orange juice to lime juice, go for it, modify the recipe! Serving Size: 4 Cooking Time: 50 minutes Ingredients: Juice of 2 fresh limes 6 cups spring water ¼ cup white sugar 1 tsp. chia seeds Lime wedges when serving Instructions: In a pitcher, combine the lime juice and water.

Add the chia seeds and let it rest for about 15-20 minutes. The chia seeds should absorb some water. You should be left with a gel like liquid. That is perfectly fine! Fantastic Chocolate Pudding with Chia Seeds

I think you will be surprised how delicious this recipe is. Who wouldn’t want any chocolate recipes to be healthier than they sound? This is the perfect way to add some nutritional value to a dessert without compromising the richness and taste of it. I think some shaved coconut and shaved chocolate are also the perfect toppings for it. Let’s proceed. Serving Size: 4 Cooking Time: 40 minutes Ingredients: 4 cups coconut milk 2 tbsp. chia seeds 2 tbsp. cocoa powder 4 egg whites ¼ cup white sugar Some shaved chocolate Some shaved coconut

Instructions: In a large mixing bowl, combine the egg whites and sugar. Using a hand mixer, beat until the mixture becomes very white and fluffy. Add the coconut milk and cocoa powder and continue blending. Finally, add the chia seeds and combine. Let the mixture rest for 10 minutes. This dish is perfect for Holidays’ time! You can make it the night before and just place it on a serving plate with crackers and a sliced baguette. You can also transport it very well; you wrap it in tin foiled and take it right along with your bottle of wine to your parents in law’s house. If they did not love you already, they will after they taste this amazing cheese log! Serving Size: 8 – 10 Cooking Time: 20 minutes Ingredients: 1 log goat cheese, your favorite brand 1 tbsp. chia seeds ¼ cup chopped walnuts 1 tbsp. brown sugar Crackers or pita bread Instructions: Make sure you keep your goat cheese in the refrigerator until the last minute.

I am happy to say, however, that I master its recipe now and will be asked to reproduce it at my friend’s house from time to time. Get your favorite glass of white wine out, and let’s get that tuna seared! Serving Size: 18 – 24 Cooking Time: 45 minutes Ingredients: 2 pounds fresh raw tuna, cut into filets 1 tbsp. chia seeds Salt ½ tsp. minced garlic 1 tbsp. fish sauce 1 tbsp. Ponzu sauce Pinch of cayenne pepper Some olive oil

Instructions: In a small bowl, combine oil, cayenne pepper, sauces, salt and garlic. Place the chia seeds into a separate bowl. Take every tuna filet, dip into the sauce and then into the chia seeds. Heat some olive oil in the pan on medium-high temperature. Sear each tuna filet just right. Serve with sticky white rice or even just a seaweed salad if you are adventurous.

Zucchini Spirals Pasta with Added Chicken and Chia Seeds
